Black Bean and Quinoa Burgers

So since I’m not eating Beef, Chicken or Pork going to Summer BBQs kinda suck. So in I’m going to share my favorite Vegetarian Burger recipe. So just so you know I’m not a gourmet chef or anything.

-1 can of black beans (drained and rinsed)
-1/4 cup of quinoa
-1/2 cup of water
-1/2 cup of bread crumbs (I used ritz crackers for a slightly buttery taste)
-1/4 cup of minced sweet peppers
-2 TB of minced onions
– 1 large clove of garlic minced
-1 1/1 tsp of ground cumin
– 1/2 tsp of salt
-1 tsp of hot sauce (your preference)
– 1 egg

Crumble Crackers (or don’t if you use breadcrumbs)2016-06-22 17.12.43

Combine Water and Quinoa in sauce pan bring to boil and simmer for 15 to 20 mins until water is absorbed and Quinoa is tender

Smash Black beans in bowl, it’s a good idea to leave a couple of whole beans.2016-06-22 17.18.32

Mix everything except the Olive Oil. I mixed with my hands as it’s the easy and fastest way to combine everything together.2016-06-22 17.22.40

I was able to make around 4 patties.2016-06-22 17.25.46

Heat a skillet with the Olive oil. Cook each patty for about 2 to 3 mins or until heated through. They should be a nice golden brown color. 2016-06-22 17.42.12

I used Pretzel Buns and topped mine with cheddar cheese, Spinach, Avocado Lime Mayo and honey mustard, but you can top it with whatever you like.

Why does it offend people if I don’t eat Meat?

So I’ve recently made a big life decision in my life. I decided to no longer eat meat. I won’t go into specifics on why I made this decision or any of my personal beliefs.

Please note that I have only been doing this for a couple of weeks, and to be honest I didn’t want to make it a big deal. I don’t go around wearing shirts that label me vegetarian, I don’t try to prosecute people who eat meat. I am pretty much silent about the whole thing in general.

Lately however I notice a lot of negativity come from the people I have mentioned it to, and I  just don’t understand it.

How does my food decisions affect anyone else but me? I’m not you, I don’t decide what you eat or what you put in your body, and I really don’t want to.

The first thing I get asked is ‘Why?’, this may seem like a harmless question and it usually can be but it’s the questions that come after it make me shake my head and then ignore you.

You don’t have to understand my reasons.

You don’t have to start listing reasons why you eat meat (I didn’t even ask.) and I am not trying to stop you.

You don’t need to give me a sarcastic “Good Luck’

You don’t need to give me all the reasons why you think I will fail, trust me I’ve already gone through them multiple times in my head.

My husband is the only person who’s opinion on this even remotely matters and guess what? He absolutely 100% supports me and my decisions, he even went so far as to look up recipes, order me food and try my meatless ‘meat’.

In conclusion what I eat and put in to my body, shouldn’t offend you. It’s not like I’m trying to eat a baby or anything.

Has anyone ever had a problem of other people being offended by something that doesn’t even affect them?
