Can I first say that I am in the process of moving to another state so I can constantly surrounded by boxes? I cannot escape boxes so that means most of my pictures will have boxes with them.

Is it too late now to say sorry?

I know I am extremely late with this post but honestly I have been so busy. My house is in a complete mess since I am in the middle of packing things and this whole timeline thing is stressful. We have a month left before we will be in California and it’s nerve racking.

I can say that I will try to post, I actually have some free time to sit and write blog posts but it would be everyday but at least twice or Thrice a week.

What I Loved About Boise

I’ve been back for a couple of days from my vacation in Boise and I’ve had some time to gather my thoughts and think back on my trip. I had so much fun, and if you follow me on Instagram or snapchat (troubledfred) you were able to sort of go a long with me.Since I liked Boise (Boy-cee) so much I decided to tell you all about what I loved about it in hopes of getting you all to one day visit.

Everyone is so nice

No seriously, Everyone. I didn’t encounter a single rude person. I didn’t even encounter a semi-rude person. Everyone was so nice and interested in what I had to say that it completely took me off-guard. My husband looked at me like a crazy person because I didn’t know how to respond to such politeness. I eventually got used to it and responded in kind but it’s something that has stuck with me especially since I came back to L.A and was hit with a rude awakening.

I did not have a single bad food. EVERYTHING TASTED SO GOOD. While I’m sure not every restaurant was just great and amazing. Everything I ate was just melt in my mouth amazing. Maybe I was just lucky and get the best restaurants? Either way SO GOOD.

Aesthetics

Everything was so great and SO GREEN. Not only were things well maintain but the houses and buildings were s nice too!Books and reading are taken seriouslyimage000000They have a Library! Yes and you must use a exclamation point.

They have an Anne Frank and Diversity mural. Also saw a lot of different diversity just walking around downtown. I was very surprised when I stumbled upon a Latino Festival and also they celebrated Japan Day.

Vegetarian/ Vegan options

For being a state known for their beef, they had a surprisingly large amount of vegetarian options on their menu, I am not just talking standard garden salad either.

Beer2016-09-02-19-32-38-1They have a couple of small breweries and all of their bars carry the local micro brews and each and every local beer I drank was DELICIOUS! I’m not usually a beer drinker but sign me up for all of the beer please. ALL OF THE BEER

Pizza and Beer
Apparently this is now my favorite combination of Food and Drink. I am usually more of a Fish and Martini or a Pasta and Wine kinda girl, but if my recent trip to Boise had taught me anything is that a great pizza and beer on tap can be the absolute best.

Black Bean and Quinoa Burgers

So since I’m not eating Beef, Chicken or Pork going to Summer BBQs kinda suck. So in I’m going to share my favorite Vegetarian Burger recipe. So just so you know I’m not a gourmet chef or anything.

Ingredients:

-1 can of black beans (drained and rinsed)
-1/4 cup of quinoa
-1/2 cup of water
-1/2 cup of bread crumbs (I used ritz crackers for a slightly buttery taste)
-1/4 cup of minced sweet peppers
-2 TB of minced onions
– 1 large clove of garlic minced
-1 1/1 tsp of ground cumin
– 1/2 tsp of salt
-1 tsp of hot sauce (your preference)
– 1 egg

Crumble Crackers (or don’t if you use breadcrumbs)2016-06-22 17.12.43

Combine Water and Quinoa in sauce pan bring to boil and simmer for 15 to 20 mins until water is absorbed and Quinoa is tender

Smash Black beans in bowl, it’s a good idea to leave a couple of whole beans.2016-06-22 17.18.32

Mix everything except the Olive Oil. I mixed with my hands as it’s the easy and fastest way to combine everything together.2016-06-22 17.22.40

I was able to make around 4 patties.2016-06-22 17.25.46

Heat a skillet with the Olive oil. Cook each patty for about 2 to 3 mins or until heated through. They should be a nice golden brown color. 2016-06-22 17.42.12

I used Pretzel Buns and topped mine with cheddar cheese, Spinach, Avocado Lime Mayo and honey mustard, but you can top it with whatever you like.

Why does it offend people if I don’t eat Meat?

So I’ve recently made a big life decision in my life. I decided to no longer eat meat. I won’t go into specifics on why I made this decision or any of my personal beliefs.

Please note that I have only been doing this for a couple of weeks, and to be honest I didn’t want to make it a big deal. I don’t go around wearing shirts that label me vegetarian, I don’t try to prosecute people who eat meat. I am pretty much silent about the whole thing in general.

Lately however I notice a lot of negativity come from the people I have mentioned it to, and I  just don’t understand it.

How does my food decisions affect anyone else but me? I’m not you, I don’t decide what you eat or what you put in your body, and I really don’t want to.

The first thing I get asked is ‘Why?’, this may seem like a harmless question and it usually can be but it’s the questions that come after it make me shake my head and then ignore you.

You don’t have to understand my reasons.

You don’t have to start listing reasons why you eat meat (I didn’t even ask.) and I am not trying to stop you.

You don’t need to give me a sarcastic “Good Luck’

You don’t need to give me all the reasons why you think I will fail, trust me I’ve already gone through them multiple times in my head.

My husband is the only person who’s opinion on this even remotely matters and guess what? He absolutely 100% supports me and my decisions, he even went so far as to look up recipes, order me food and try my meatless ‘meat’.

In conclusion what I eat and put in to my body, shouldn’t offend you. It’s not like I’m trying to eat a baby or anything.

Has anyone ever had a problem of other people being offended by something that doesn’t even affect them?
